Cured king scallop served with crisp gem lettuce, prosciutto, seared compressed watermelon

Slow braised feather blade of beef, marinated in a rich & aromatic ginger, garlic, coconut & chilli rendang sauce, served with basmati rice, tasted almonds and torn coriander
